Blending doesn’t have to just begin and end with smoothies. There are all sorts of different things you can make using a blender, from sauces to cocktails to pancake batters, and of course, our favourite: soup!
With a high-quality blender, soup-making becomes quick and easy. In fact, you can even create your soups in seconds.
High-speed blenders will heat your soup through friction, but handheld blenders and your average jug blender will not — so depending on the type of blender you own, you may need to heat further on the hob afterwards.
Here are four flavoursome soup recipes that you can make with a blender; read on to get inspired.
Tomato & basil soup
You can’t go wrong with a classic tomato & basil soup. Everyone loves it — it’s simple but flavoursome.
The recipe below is super easy to make and only contains a few ingredients. You can even serve it cold as a gazpacho. Delicious.
Ingredients:
10 tomatoes
1 onion
2 garlic cloves
2 tbsp olive oil
1 cup passata
1 small bunch of fresh basil
Salt and pepper
Instructions:
- Quarter tomatoes and onions
- Place on baking tray with garlic cloves, olive oil, salt and pepper
- Roast for 30 minutes at 180°c
- Add all ingredients from tray to blender
- Top up with 1 cup of passata and basil
- Blitz on high power until smooth
- Season with salt and pepper to taste
Thai butternut squash & coconut soup
This butternut squash and coconut soup tastes amazing. It combines some awesome ingredients to recreate some classic Thai flavours, and the butternut squash brings its own rich creaminess to the mix.
There’s a bit of work to do before you blend it, but trust us — once you’ve tasted it, you won’t mind the extra time you’ve spent making it.
Ingredients:
1 butternut squash
1 onion
2 garlic cloves
1 small piece of ginger
1 tin of coconut milk
400ml vegetable stock
1 tbsp coconut oil (or rapeseed oil)
1 red chilli
1 stick of lemongrass
2 kaffir lime leaves
1 small bunch of fresh coriander
1 lime
Instructions:
- Roast butternut squash for 30 minutes at 180°c
- Sweat onions, garlic and ginger, red chilli, lemongrass, kaffir lime leaves in the coconut oil in a big pan
- Add roasted butternut squash to pan
- Top up with 400ml stock and tin of coconut milk
- Simmer for 15 minutes
- Add all ingredients to blender
- Blitz on high power until smooth
- Heat on hob if necessary
- Garnish with coriander and lime to taste
Hearty vegetable soup
This winter warmer is a winner. It contains a healthy dose of vegetables to keep your immune system strong and protect you from any coughs and colds doing to the rounds.
The beauty of this recipe is that you can put any vegetables you like into it, and experiment with your flavour mixes!
Ingredients:
5 tomatoes
2 carrots
2 sticks of celery
1 courgette
1 big handful of spinach or kale leaves
1 cup of broccoli
1 onion
1 clove of garlic
200ml vegetable stock
Instructions:
- If you’re using kale, remove kale stems
- Roughly chop vegetables and add to blender
- Add 200ml of hot vegetable stock
- Blitz until you’ve achieved the texture you’d like — smooth or chunky
- Heat on hob if necessary
- Season with salt and pepper to taste
Broccoli & stilton soup
Broccoli is a powerful vegetable: full to the brim with loads of different vitamins, minerals, fibre and antioxidants. This means it supports healthy cell growth as well as helping with heart health, brain function and digestion. It’s even thought to protect us against cancer.
That’s why we’ve come up with this super healthy — and super delicious — blended soup recipe. And how do you make any recipe even better? Add cheese of course!
Broccoli and stilton is a classic combination, but if you’re not a blue cheese fan, you can always swap out the stilton for cheddar.
Ingredients:
1 whole broccoli
100g stilton cheese (or extra mature cheddar)
1 onion
1 garlic cloves
200ml vegetable stock
2 tbsp olive oil
Salt and pepper
Instructions:
- Sweat onions and garlic in a pan with olive oil
- Add broccoli to pan and cook for a few minutes
- Top up with 200ml vegetable stock
- Bring to boil and simmer for 5 minutes
- Tip contents of the pan into the blender
- Add your chosen cheese to the blender (either grated or crumbled)
- Blitz on high power until smooth and creamy
- Heat on hob if necessary
- Season with salt and pepper
These four soup recipes are flavoursome and fast — perfect for taking to work for lunch, warming you up on a cold winter’s evening, or even to be used as a starter at your next dinner party.
We’ve recommended you use a high-power blender to make your soups, but you can also use a hand blender to make these soups smooth and delicious!
